New Orleans Style Beignets

Beignets are a little deep fried French doughnuts. Similar to English fritters these are topped with powdered sugar and are served during breakfast. Enjoy the recipe!

Instructions

  1. Add water, sugar, and yeast to a bowl and let sit for 10 to 15 min to allow the yeast to rise.
  2. In a mixing bowl, whisk together the egg, salt, and evaporated milk.
  3. Mix the yeast mixture into the egg mixture and beat gently till all is incorporated.
  4. Add 2 cups of the flour to the mixture and beat till it turns into a wet dough.
  5. Add the shortening and mix till well incorporated.
  6. Put the dough mixture onto a floured working surface. Knead the dough and continue to add flour to the dough till the dough is not tacky anymore.
  7. Once you have kneaded the dough to a consistency where it’s not sticking to everything, place into a lightly oiled bowl and cover. Let sit in the fridge for 2hrs to allow the dough to rest.
  8. Once the dough has rested, place onto a lightly floured work surface and roll out to 1/8th-inch thickness.
  9. Using a knife or bench scraper, cut into 3×3 inch squares.
  10. Place your oil in a large pot or dutch oven and heat up till the temperature reaches 370 degrees Fahrenheit. Use a fryer thermometer to help you out with reaching and keeping optimal temperature.
  11. Once the oil reaches the temperature, place 5 squares of dough into the oil and fry till golden brown.
  12. Using a metal spoon gently baste the tops of the beignets with the hot oil to help with even cooking.
  13. Once the beignets become golden, place them onto a plate lined with paper towels to catch any excess oil and top with confectioners sugar.
  14. Enjoy while hot and with some coffee!
