Dill and Lemon Crab Ravioli

  1. In a large bowl, combine all of the ingredients except for the pasta dough.
  2. Mix the crab mixture thoroughly and taste for seasoning.
  3. Using a pasta roller, roll out the pasta dough to the second lowest setting on your roller, about 1mm thick. The dough should be somewhat see-through, you should be able to see your fingers through it.
  4. Keep rolling all of your pasta dough out until it has all been rolled out into sheets.
  5. Use a square ravioli cutter to cut the pasta sheets into ravioli shapes. Cut as many as you can out of each sheet. (If you don’t have a ravioli cutter, feel free to cut your own shapes out with a knife. This won’t give you a normal ravioli shape and might take more time.)
  6. Take the remains of your dough that has not been cut into ravioli and roll that out into sheets, then repeat step 5.
  7. Place the ravioli squares onto a large plate or baking sheet (I prefer using a baking sheet and spreading them out to avoid them sticking together) lined with plastic wrap (to avoid the ravioli sticking to any surface) and cover with plastic wrap until you have all of the ravioli cut out.
  8. Take each ravioli square and count them out to make sure there is an even number of squares. If there is an odd number, simply discard the last one.
  9. Take half of the cutout ravioli sheets and place a 1/3 or 1/2 tsp sized ball of the crab mixture in the center of the cutouts.
  10. Once you have completed that, baste the sides of the ravioli sheets with a little bit of egg wash.
  11. Place atop ravioli sheet onto the other, sealing the sides using your fingers and trying to push out as much air as you can.
  12. Place the ravioli into a boiling salted pot of water and cook for 4 minutes, or until 1 minute after the water has been brought back to a boil.
  13. Serve with your favorite sauce and enjoy!

Notes

Serve with a white wine sauce for an extravagant taste of this delish dish!
